Back by popular demand! Butchering Seminar with Rick Hess at Batz Farm

To be held: Friday January 21st and Friday and Saturday February 4th and 5th, 2022

Friday January 21st 6:00 pm until done- Kill and hang the steer, hot dog roast

Friday February 4th 12:00 pm until done- Learn the cuts of the steer, beef stew dinner

Saturday February 5th 6:00 am until done- kill, skin and cut the 4 hogs, make scrapple and cook down lard,

grind and stuff sausage, package all meat.  Donuts, coffee and

chocolate milk for breakfast. Pig roast and sides for dinner.

Cost: $500 **Class size limited to 20** Non-refundable Deposit of $200 due now to reserve your spot, the balance due in cash or check the day of the class

Cost includes hands-on old school instruction by a very knowledgeable and skillful veteran butcher, 4 meals, approx. 40-50 lbs of meat, scrapple and lard to take home, a butchering knife and Tshirt you keep, everything needed for the class including aprons, gloves, sausage grinders and stuffers, cutting boards, freezer paper and tape, loose sausage bags and ties, and a variety of seasonings.  Meals are all included and your family is welcome to join for all.

The steer is a Hereford breed and the hogs are a berkshire/hereford cross and have been raised right here on our farm.  The steer raised on his mother, pasture, hay and a little grain.  The hogs were raised on their mother, and then grown on a non-gmo feed. Everyone signed up will bring a cooler and take home a variety of items- a little bit of everything! Hams and bacons will be taken to a local butcher Monday after class to be cured, and once that’s back to us, you will pick up those at the farm.

You will be asked to sign a waiver upon arrival.  You can attend any or all of the times posted, but the cost is the same. This is a once-a-year class so don’t miss it! Families welcome, kids must be supervised by a parent. It’s a farm, and safety is of the utmost importance!
